15 Healthy Green Recipes for Spring (1)

Spring weather! It’s finally here. I’m jumping ahead of the calendar by a few days, but my nose tells me (achoo) that spring has arrived. I’m celebrating by sharing fifteen of my favorite green recipes. You’ll find hearty green salads, of course, some fun green pasta dishes, soup and more.

I’m still buzzing after a great weekend, so I’m going to keep this short. Just wanted to share a few housekeeping things before I go:

4. Ali wrote about our experience working remotely for a month in Austin over here. We’re already scheming up a return trip.

1) Fresh Arugula and Black Bean Tacos with Pickled Radish and Feta

Easily gluten free and vegan

Spicy arugula and black beans with tangy quick-pickled radishes. Love these!

2) Greek Farro and Chickpea Salad with Herbed Yogurt

Vegetarian

Hearty salad full of greens, whole grains and Greek flavor.

3) Lemony Collard Greens Pasta

Easily gluten free (use GF pasta)

Super simple pasta dish with Brazilian collard greens, lemon and Parmesan. So good.

4) Arugula, Carrot and Chickpea Salad with Wheat Berries

Vegetarian

These flavors were made for each other.

5) Baked Asparagus Frittata

Gluten free

This frittata makes a statement at breakfast (or dinner).

6) Roasted Broccoli, Arugula and Lentil Salad

Gluten free and easily vegan

Roasted broccoli and brussels with French lentils and greens. Sounds too healthy to be tasty, I know, but this salad proves otherwise.

7) Sugar Snap Pea and Carrot Soba Noodles

Easily vegan

Colorful soba noodle dish with snap peas and carrots tossed in an irresistible sauce.

8) Raw Kale and Brussels Sprouts Salad with Tahini-Maple Dressing

Gluten free and easily vegan

I could eat this creamy, crunchy tahini salad every day.

9) Redeeming Green Soup with Lemon and Cayenne

Gluten free and vegan

This soup is flavored with caramelized onions. It’ll be just right if you overdid it this weekend.

10) Kale, Clementine and Feta Salad with Honey-Lime Dressing

Gluten free

So colorful! This cheerful citrus and kale salad is full of bright flavors.

11) Super Kale, Hemp and Flaxseed Oil Pesto

Easily gluten free and vegan

This is the healthiest pesto around. You can make it with hemp seeds and flaxseed oil or pecans and olive oil.

12) Greek Broccoli Salad

Gluten free and easily vegan

One of my best friends texted me yesterday to rave about this salad. I think you’ll love it, too.

13) Spring Pea and Asparagus Pasta

Vegetarian

Like springtime in a bowl!

14) Kale, Black Bean and Avocado Burrito Bowl

Gluten free and vegan

So much goodness here. I’d eat this for lunch every day if I could.

15) Spicy Kale and Coconut Stir Fry

Gluten free

Everyone who has tried this stir fry loves it. I bet you will, too!

    Boy Oh Boy, these dishes look great. Thanks so much for the prep work and the beautiful photography — I love following your blog. Making the switch to more greens and less carbs (like bread and pasta) and reducing meat. With your blog I feel I can do anything: the recipes are easy to follow and the food is wholesome with very tasty combinations. I am also following Ali’s blog now…you two Rock In The Kitchen!

    I just noticed that these comments were from 2015, before I into a baking fiend after not having baked for 10, 15 years (!). Your banana bread will soon be in my belly, as it’s in the oven as I write this. I decided it was time to stop the madness before I turned into a blimp, and healthy greens were the ticket. But I couldn’t figure out how to make a variety of greens that would turn out tasty enough to want to eat. Well, I’ve been on a roll with these recipes! Along those lines,, there’s nothing worse than investing in a beautiful cookbook, only to find 3 recipes worth making or trying 5 and liking none. Well, I have made my many C+K faves again and again, and your (my) book has pages and pages smeared with coconut oil, cashew cream and god knows what else — the sign of an amazing and much-loved cookbook! Most addictve of all, though… heehee.. are the photos of Cookie (insert heart emoji here).
