Can you use regular white potatoes for this recipe?

We tried, it doesn’t work. After testing several batches with regular white potatoes, it’s too dry. Sweet potatoes have more moisture and that’s why they work. But we’ll still figure out a way and keep testing to make this recipe work with regular potatoes. Stay tuned!

2-Ingredient Sweet Potato Rolls: No Yeast

Yield: 6 rolls

Prep Time: 10 minutes mins

Cook Time: 20 minutes mins

Resting Time: 30 minutes mins

Total Time: 1 hour hr

These rolls are soft, tender and super easy to make. Make your own self rising flour by combining: 1 cup all-purpose flour, 2 teaspoons baking powder and 1/4 teaspoon of salt. This recipe makes 6 rolls that will cook all the way through. They're the perfect size for sliders. Don't make the rolls any larger because they might not cook all the way through and still be raw in the center.

Optional: Before baking, brush the tops with melted butter for a more cripsy and soft top.

Ingredients

  • 1 cup (240 ml) cooked sweet potato , mashed
  • 1 cup (240 ml) self rising flour

Instructions

  • Preheat oven to 400°F. Line a baking sheet pan with parchment paper.

  • In bowl, combine sweet potato and the self rising flour. Stir with a fork until a dough ball forms. Make sure to scrape all the self rising flour and sweet potato along the sides of the bowl.

  • On a lightly floured surface, knead the soft dough ball for about 1 minute, or until smooth. Don’t keep adding too much flour to the dough or else it will be tough and hard. You want to keep the dough soft and pliable, so don’t over-knead it.

  • Cut the dough into 6 equal pieces. Roll the dough between your hands to form 6 balls. Place on parchment lined baking sheet and let the dough balls rest for about 30 minutes (they will also rise slightly).

  • Bake the rolls for 15-20 minutes, or until the rolls are cooked through. Allow to cool and serve with butter or as small sliders or sandwiches.

I couldn’t believe how easy these were to make at home. The whole family loves it.

They were delicious, but the tiny amount of salt in the self-rising flour is not enough. I needed to add ~1/4 teaspoon (to taste) during the dough mixing.

Thanks for the feedback Tony! Glad you enjoyed the rolls. And normally it can take up to 48 hours for comment approval, especially when it’s the weekend.

Can sweet potato be substituted with a regular potato? Thanks!

    • Best Recipe Box Reply

Hi! We tried it with regular potato and it just came out too hard and dry. The sweet potato is more tender and soft, which worked great in the rolls.

  6. Kate Reply

Can I use an alternate flour?

    • Best Recipe Box Reply

Hi Kate, we haven’t tested it with any alternate flours yet. Hoping one of our readers has tried it and will give some feedback. Thank you!

Yes! I have successfully used cassava flour in this recipe.

      • Mona Reply

Did you use cassava flour (whole root) or the starch? Tried this recipe with cassava flour and it came out very dense/hard… :S

  7. Marie Reply

Going to try this today with GF 1:1 flour. Will let you know how it goes.

    • Joy Mosley Reply

How did this work with the gluten-free flour?! Did you have to add baking soda and/or baking powder to help it rise?

  8. Susan Reply

I used bread flour as that was all that I had. I added the baking powder and salt. The rolls came out great. I used a little bit less flour because bread flour is more dense.

    • Best Recipe Box Reply

Thanks for sharing Susan! This is super helpful for everyone. Glad you enjoyed the recipe.

  9. Judi Barton Reply

I wonder if pumpkin could be used in place of the sweet potato? Or butter nut squash?

    • Best Recipe Box Reply

      Hi Judi.
We haven’t tried with either but it would be a fun, and potentially delicious test. If anyone tries it, let us know how it turns out.
